Hummus
(not Greek but healthy & tasty)
Ingredients
- 1/4 to 1/3 cup tahini paste
- Juice of a large lemon
- 2 tins chickpeas
- 4-5 cloves crushed garlic
- 1-2 Tbsp olive oil
- 1-2 Tbsp red wine vinegar
- 1 tsp cumin
- Salt to taste
Method
1.
First blend the tahini paste in a food processor with the lemon juice.

Thoroughly rinse the two tins of chickpeas and add to the processor.
3.
Add the crushed garlic, the tsp cumin and salt to taste.
4.
Pour in the olive oil, vinegar and 6 tbsp water or 6 ice cubes.
5.
Blend thoroughly.
6.
Store in the fridge for a few hours for the flavours to combine.
7.
Serve with a dash of paprika for garnish and oven roasted chickpeas.
