Greek Red Lentil Soup
Ingredients
- 2 tablespoons olive oil
- 1-2 chopped onions
- 2-3 crushed garlic cloves
- 2 carrots chopped into rondelles
- 3 tablespoons dry oregano
- 1 teaspoon cumin
- Salt & pepper
- ½ teaspoon chili
- 2 bay leaves
- 1 can crushed whole peeled tomatoes or fresh sun-ripened tomatoes
- 7 cups chicken or vegetable broth/stock
- 2 cups red lentils
- Rind and juice of 1-2 lemons
- Crumbled feta and chopped parsley for the garnish
Method
1.
Gently saute the chopped onions & crushed garlic in the olive oil.

Add the chopped carrots and saute for a few more minutes.
3.
Add tin of crushed or fresh tomatoes and the herbs, spices, chili and bay leaves.
4.
Add the lemon rind.
5.
Season with salt and pepper.
6.
Add the vegetable or chicken stock and bring to the boil.
7.
Add the red lentils and reduce the heat to medium simmer.
8.
Cook the lentils until done. Approximately 15-20 minutes.
9.
Add the lemon juice and garnish in the bowl with the feta and parsley.
